A little crispy, a little saucy, and totally satisfying. Our Five-Step Easy Eggplant Parmesan is a lighter, faster twist on an Italian classic that brings Italian comfort home — made easy with Ciao Pappy Marinara and just five simple steps.
INGREDIENTS:
- 2 medium eggplants
- 1 jar of Ciao Pappy’s Marinara Alla Pappy
- 1 ball of mozzarella
- ½ cup of grated Parmesan
- extra virgin olive oil for drizzling
- Kosher salt
DIRECTIONS:
- Preheat oven to 350°F. Slice your eggplants, season with salt, and roast for about 30 minutes
- Once softened, layer eggplant with mozzarella and marinara in a baking dish
- Top with more sauce, mozzarella, and a generous sprinkle of parmesan
- Bake at 350°F for another 25 minutes until the cheese is golden and bubbly
- Drizzle with EVOO right before serving
