Five-Step Eggplant Parmesan

A little crispy, a little saucy, and totally satisfying. Our Five-Step Easy Eggplant Parmesan is a lighter, faster twist on an Italian classic that brings Italian comfort home — made easy with Ciao Pappy Marinara and just five simple steps.

INGREDIENTS:

  • 2 medium eggplants
  • 1 jar of Ciao Pappy’s Marinara Alla Pappy
  • 1 ball of mozzarella
  • ½ cup of grated Parmesan
  • extra virgin olive oil for drizzling
  • Kosher salt

DIRECTIONS:

  • Preheat oven to 350°F. Slice your eggplants, season with salt, and roast for about 30 minutes
  • Once softened, layer eggplant with mozzarella and marinara in a baking dish
  • Top with more sauce, mozzarella, and a generous sprinkle of parmesan
  • Bake at 350°F for another 25 minutes until the cheese is golden and bubbly
  • Drizzle with EVOO right before serving
